How you want to run your electrical is up to you, but there’s nothing worse than having your freeze dryer trip a breaker switch (especially when you’re not there). Installing or using an extra dedicated 20 amp for this model and the Large Pharmaceutical unit as well is strongly suggested.
It is the responsibility of the homeowner to verify that the hired contractor furnishes the necessary license and insurance required for the work being performed. All persons depicted in a photo or video are actors or models and not contractors listed on this sitio.
Be wary of buying freeze-dryers that come from locations where the unit could have been tampered with or damaged, even by accident.
Do you have any vacuum gauges at all to test the pump? ( Though I doubt that is the problem based upon your tests )
Granted, most of that time is the freeze dryer doing all the work, but the process is not without effort. Once the food is ready it must be put into appropriate containers with oxygen absorbers and sealed properly so they can last.

I purchased a brass reducer and pushed the blue hose over it.
Installation of unit. This appliance cannot sit on the floor: both because it must be elevated for the ice melt tubing to drain into a container below it, and to be able to access the vacuum pump and the on/off switches for the unit.

I, too, have noticed a significant difference when I defrost mid-cycle. I do that routinely now. I carefully use a heat gun to "shock" the surface of the ice, moving back and forth across it fairly swiftly, which causes it to crack and separate somewhat from the cylinder.

Without an pump isolation valve I would expect some air to flow back into the chamber through the pump resulting in the steady rise you witnessed. I saw the same phenomenon before I installed an isolation valve on my pump.
